Mema's Easy Favorites

Hershey Bar Cake

  Ingredients:

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 10 plain Hershey's bars, melted
  • 1 cup sour cream
  • 1 pinch baking soda
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1 cup nuts - almonds, pecans, walnuts, peanuts.. Whatever you like!

Preparation:  
 

  1. Cream together butter and sugar. Add eggs one at a time mixing well with each egg. Add vanilla and chocolate. 
  2. In another bowl mix flour, baking soda, and salt together. Mix flour mixture and sour cream alternately into butter mixture. 
  3.  Bake in a tube pan for 1 1/2 -2 hours at 300 F.



Vanilla Wafer Cake

Ingredients:

  • 2 sticks butter (1 cup)
  • 2 cups sugar
  • 6 eggs
  • 1/2 cup milk
  • 1 12 oz box vanilla wafers, crushed fine
  • 7 oz coconut
  • 2 cups chopped nuts - pecans, almonds, walnuts

Preparation:  

  1. Cream together butter and sugar. Add eggs one at a time and mix well with each addition.
  2. Alternately, add milk and crushed vanilla wafers . Mix well with each addition.
  3. Add Coconut and nuts. Mix well.
  4. Bake in a tube pan for 1 1/2 hours at 320 F.



Potato Chip Cookies

 Makes 5 dozen  

Ingredients: 

  • 3/4 cup plus 1 tablespoon unsalted butter
  •  3/4 cup plus 1 tablespoon salted butter
  •  1 cup sugar
  •  2 teaaspoons vanilla flavoring
  •  3 cups flour
  • 1 1/2 cup crumbled plain potato chips
  •  1 1/2 pecans, chopped
  •  Powdered sugar 

  Preparation:  

  1.  Cream butters and sugar together. 
  2. Add remaining ingredients, except powdered sugar. Mix well.
  3. Drop by rounded teaspoonful onto parchment paper lined cookie sheet. Bake 350 F for 12 - 15 minutes.
  4. Cool on racks. When cool roll each cookie in powdered sugar.


Mema's Pies

Buttermilk Pie

Ingredients: 

  • 1 stick butter (1/2 cup)
  • 6 eggs, well beaten
  • 3 cups sugar
  • 1/2 cup flour
  • 1 cup buttermilk
  • 3 teaspoons vanilla flavoring
  • 1 teaspoon butter flavoring

Preparation:

  1. Cream together butter and sugar. 
  2. Add eggs and mix well. 
  3. Alternately add flour and buttermilk to butter and egg mixture, mixing well after each addition.
  4. Add vanilla and butter flavoring. Mix well. 
  5. Pour into two unbaked pie shells. Bake at 350 F for 1 hour.



Million Dollar Pie

Ingredients: 

 

  • 8 oz cream cheese
  •  1/4 cup sugar
  •  1 1/2 cup powdered sugar
  •  8 oz cool whip
  •  1 medium can crushed pineapple, drained
  •  1 premade graham cracker crust
  •  1/2 cup coconut

 Preparation: 

  1.  Cream together cream cheese, sugar and powdered sugar.
  2.  Mix in remaining ingredients. 
  3. Pour into graham cracker crust. 
  4. Sprinkle coconut on top.
  5.  Cover tightly, refrigerate for at least 4 hours. 


Shoofly Pie

Ingredients: 

  • 1 1/2 cup flour
  •  1/2 cup sugar
  •  1/8 teaspoon salt
  •  1/2 teaspoon cinnamon
  •  1/4 teaspoon ground ginger
  •  1/4 teaspoon nutmeg
  •  1/4 cup butter
  •  1/2 teaspoon baking soda
  •  1/2 cup molasses
  •  3/4 cup boiling water

   Preparation:  

  1. Mix dry ingredients together and cut in butter until it resembles coarse meal. 
  2. In a separate bowl mix baking soda with molasses. Immediately stir in boiling water. 
  3. Add 1 1/3 cup of flour mixture. Stir well. 
  4. Pour into unbaked pie shell. Sprinkle the top with remaining flour mixture. Bake 375 F for 30 – 40 minutes – until crust is brown.

Mema's Cakes

Poundcake

Ingredients: 

  • 2 sticks (1 cup) butter
  • 1 2/3 cups sugar
  • 6 eggs
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1/2 teaspoon vanilla flavoring
  • 1/2 teaspoon almond flavoring
  • 1  teaspoon lemon flavoring

  Preparation:  

  1. Cream butter and sugar together until fluffy.
  2. Add eggs one at a time, beat well with each addition. 
  3. Add flavorings to egg and butter mixture.  Mix well.
  4. In a separate large bowl, mix salt and flour together.  
  5. Add flour a little at a time to egg mix until all flour is added and the mixture is smooth. 
  6. Bake in a greased and floured tube pan at 275 F for 1 hour .

Banana Split Cake

 Ingredients: 

  • 2  sticks butter, (1 cup)
  • 2 cups graham crackers crumbs
  • 2 eggs
  • 2 cups powdered sugar
  • 5 bananas, sliced
  • 1 large can crushed pineapple, drained
  • 1 large carton cool whip
  • 1 cup chopped pecans
  • 1 cup maraschino cherries, drained and chopped

  Preparation:  

  1. Melt one stick (1/2 cup) butter and mix into graham cracker crumbs. Pour into a 9" x 13" pan.
  2. In a large mixing bowl beat remaining butter, eggs and powdered sugar until smooth. Spread over crust. 
  3. Layer bananas, pineapple, cherries and pecans alternately with cool whip. Make sure cool whip is last layer on top.
  4. Cover and chill overnight.
