No- Fail Cowboy Biscuits

No- Fail Cowboy Biscuits

  Ingredients

  • 1 tsp salt
  • 2 cups flour
  •  2 tsp baking soda
  •  ½ cup lard or butter
  •  ¾ cup buttermilk
  • 2 Tbsp milk


Preparation

  1. Sift dry ingredients together. 
  2. Cut lard or butter into quarter-inch cubes.
  3. Using a pastry cutter or 2 forks, cut butter into dry ingredients. (The mixture should resemble a coarse meal when complete.)
  4. Stir in buttermilk a little at a time until a soft dough is formed. 
  5. Turn onto a floured board and knead lightly. 
  6. Roll out to ½ inch thick and cut with a 2-inch floured biscuit cutter.
  7. Place on ungreased baking sheet and brush tops with milk.
  8. Bake at 450 for 10-12 minutes. 


Yield:  About 12 biscuits

Moroccan Country Bread

Moroccan Country Bread

  Ingredients:

  • 1 ½ packages dry yeast (about 1 tbsp)
  • 2 ½ cups warm water
  • 7 cups all-purpose flour, plus 2 tsp divided
  • 2 tsp kosher salt
  • Cooking spray
  • 1 tbs extra virgin olive oil

Preparation:

  1. Dissolve yeast in 2 ½ cups warm water in a large bowl. Lightly spoon flour into dry measuring cups; level with a knife. Stir salt into yeast mixture. Gradually stir in 7 cups flour, one cup at a time; beat with a mixer at medium speed until dough forms a ball. 
  2. Turn dough out onto a lightly floured surface; shape dough into a 12 inch log. Divide dough into 3 pieces; shape each piece into a (4 inch) dome-shaped loaf. 
  3. Place loaves on a baking sheet lightly covered with flour; dust tops lightly with 2 tsp flour, and lightly coat with cooking spray. Cover and let rise in a warm place (85 deg), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.)
  4. Position oven rack in lower third of oven. Preheat oven to 350 Degrees.
  5. Uncover loaves, and brush each with 1 tsp oil. Bake at 350 for 30 mins or until sounds hallow when tapped (bread doesn’t brown). Removed from oven; cool on wire racks. 

Focaccia with Rosemary

Rosemary Focaccia Bread

 Ingredients:

  • I pkg dry yeast  (2 ¼ tsp)
  • 2 tsp sugar
  • 1 1/3  cup water
  • 3 ½ cup flour 
  • 2 tsp salt
  • ½ cup olive oil (extra virgin is best) 
  • 2 Tbsp fresh rosemary 
  • Flaky salt 

Preparation: 

  1. Heat water to lukewarm – no more than 120 F.
  2. Stir in yeast and sugar. Let sit for 10 minutes. If it is not frothy, then start over with new yeast. 
  3. Prepare a large bowl by greasing it with about 2 Tbsp olive oil.
  4. In a separate bowl, add flour, salt, and 2 Tbls Olive oil, stir in yeast mixture. It is best to use a wooden spoon to mix this dough until it is combined. After the dough comes together, knead it in the bowl until it becomes a ball. Turn it out onto a lightly floured surface and knead it until it is elastic ~ 5 minutes.
  5. Place into prepared bowl and coat all sides with olive oil. Cover and allow to rise ~ 1 hr. 
  6. Use two tablespoons of olive oil to prepare a 9 x 13 pan. 
  7. When dough has doubled in size, punch the dough down and  remove from bowl and transfer  to baking pan.  Press the dough to the edges of the pan and put finger indentations into the dough. Coat with 2 Tbsp of olive oil (you can freely use more olive oil as this makes the top crunchy) and sprinkle with rosemary and flaked salt. 
  8. Bake in 400 F oven for 25 minutes.

Ham and Cheese Biscuits

Ham and Cheddar Biscuits

 Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon granulated sugar
  • ¾ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • 4 ounces sharp cheddar cheese, shredded (about 1 cup shredded)
  • 1 cup buttermilk, cold
  • ½ cup unsalted butter, melted and cooled for 5 minutes
  • 1 cup finely chopped ham or cooked bacon
  • 1 teaspoon minced fresh parsley (or ¼ teaspoon dried)


Directions:

  1. Preheat oven to 475 degrees F. Line a baking sheet with parchment paper or a non-stick baking mat; set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, garlic powder and cayenne. Stir in the cheddar cheese, parsley and ham; set aside.
  3. In a medium bowl, stir together the buttermilk and melted butter until the butter forms small clumps.
  4. Add the buttermilk mixture to the flour mixture and mix gently with a rubber spatula just until a dough forms and no dry ingredients remain. Place on a baking sheet, leaving a little more than an inch between biscuits.
  5. Bake until the biscuits are golden brown, about 12 minutes. 
  6. While the biscuits are in the oven, stir together the 2 tablespoons melted butter, garlic powder and parsley.   Brush melted butter mixture over biscuits immediately after taking out of oven.  Allow to cool for at least 5 minutes before serving.

Easy Bread Using a Mixer

Stand Mixer Easy Bread

 This is an easy recipe for bread that uses a stnad mixer to knead the dough.


Ingredients:

1 cup milk

¼ cup water

2 ¼ tsp dry yeast (1 pkg) 

3 cups Flour (you can use all purpose or bread flour) 

1 tsp salt

¼ tsp baking soda

1 Tbls dry malt powder

1 Tbls sugar


  1. Heat liquid to 120 ° F – this is lukewarm – not hot, add sugar and yeast, stir and then let sit 5 mins.
  2. Mix together remaining dry ingredients in a  bowl for a mixer. Add liquid to the dry ingredients. Using a low setting and the dough hook, mix the ingredients until they form a dough. When the dough has formed, change speed to medium and knead for 5-7 minutes. 
  3. Coat a loaf pan with grease (you can then coat the pan with cornmeal), place dough into pan, cover with a cloth and let rise in a warm place for 45 minutes. 
  4. When dough has risen to top of pan bake 400 ° F for 25 mins.

Beer Bread and Muffins

A flavorful solution if you can't find yeast at the store!

Beer Bread 

1 12 oz can beer

3 cups biscuit mix

2 tablespoons sugar


  1. Blend all ingredients together. 
  2. Pour into a greased loaf pan. 
  3. Bake at 350 F for 45 minutes.


Beer Muffins

2 cups biscuit mix

3/4 cups beer

1 tablespoon sugar


  1. Mix all ingredients together. 
  2. Pour into greased 12 cup muffin pan. 
  3. Bake at 400 F for 15 minutes.
